12. Ponshu/Ajito
In the early part of the year, chef Takeshi Kawabe turned the back room at Sho sushi restaurant into Ajito, an izakaya speakeasy. This fall the Crowfoot Sakana Grill got similar treatment when it was transformed into Ponshu. Showy, dramatic, and delicious, both put a fun spin on Japanese cuisine.
