When Zaza was a few months old Lindsay texted me about this pancake recipe & now Zaza eats them at least once a week. They’re delicious, nutritious & easy- I make them, Michael makes them & Zaza’s nanny makes them.
They actually remind me of these 3 ingredient pancakes ( remember to add some TSC 5 second jam ).
Anyway, Lindsay’s pancake recipe is our go-to so I couldn’t be more excited that she’s here to share it with you all today.

Hi again, TSC readers! It’s Lindsay from Weeknight Bite, back with Part II of our Feeding Babies Series! If you haven’t read it yet, definitely catch up on Part I, which has all of my tips for getting started with introducing solids & how to make it a fun process for both you & your babe! Now I’m here to share one of my favorite baby-approved recipes, Banana Egg Pancakes.
Lauryn & I are definitely on the same page when it comes to recipes — they have to be super quick, easy, & healthy. And if you’re a new mom, you know how precious any spare second is, so the more simple & efficient, the better! These pancakes are all of the above & seriously so delicious, you’ll want to make some extra for you, too.
Like I mentioned in the Part I post, I started my son Noah on purées & mashed foods first, just because that’s what made me feel the most comfortable. When he seemed more ready for finger foods, the first food I really wanted him to try was eggs.
They’re full of healthy fat & protein and tons of important nutrients like choline which is key for their brain development. It’s also an important first food to work into their diet to help lower their risk of developing an egg allergy ( one of the most common allergens ).
So clearly I was all about the eggs for him… the only problem was he wasn’t into them, like at all. I kept trying them out & realized I had to come up with another way to get them into his diet. Enter these pancakes!
The first time I made them, Noah wolfed them down so quickly I swore he must have fed them to our dog, Penny. They immediately became our go-to breakfast, & even now at 19 months, they’re his absolute favorite. I make some variation of them several days a week!
The base of the recipe is as simple as it gets: 1 mashed banana + 2 whisked eggs. That’s it! From there you can add whatever you want to it — I love adding chia seeds, flax seeds, hemp seeds, different spices like cinnamon or nutmeg, almond butter or peanut butter, or throwing it in the blender with some spinach ( Lauryn / Zaza’s go-to method! ).
I feel like I can’t even call this a recipe since it’s so easy, but here it is. Definitely try them out with your babes & let us know how they like them!
Baby Banana Egg Pancakes:
+ 1 banana
+ 2 eggs
Add-ins: spices, nut butter, ground flax seeds, chia seeds, hemp seeds spinach… feel free to get creative!
Makes 6-7 pancakes, depending how big you make them
♡ Mash banana in a bowl & whisk in eggs until smooth. Stir in whatever add-ins you’d like. If you want to add spinach, just put all the ingredients into your blender & blend it up.
♡ Warm oil or butter in a skillet – I use olive oil, coconut oil, grass-fed butter, or avocado oil.
♡ Spoon the batter into the pan. A little tip to make the pancakes thicker & fluffier: once the batter starts to set, add another small spoonful in the middle before flipping to give the pancakes a little extra height. Then flip & cook for another minute or so on the other side.
♡ Serve! ( In the beginning when Noah was around 6 or 7 months, I’d cut them into strips or small pieces so it was easy for him to pick up. Now I just cut them in half & he’s good to go! )
